RUSSIAN TEA CAKES

**They served these at co-op last Friday for Russian day, and I liked them so much that I just had to make some. Mine is minus the nuts due to my daughter's allergy to them, but they were still very good. They aren't as sweet as your usual cookie, which is fine with me, as I usually cut back on sugar in other cookie recipes anyways. It seems like you're doing something wrong as you're trying to roll them into balls, because they want to fall apart, but stick with it, that's how they're supposed to be--they turn out fine. I forgot to roll in powdered sugar a second time, otherwise mine would have turned out prettier.**

1 cup butter, softened
1/2 cup powdered sugar
1 tsp. vanilla
2 1/4 cup all-purpose flour
3/4 cup finely chopped nuts
1/4 tsp. salt
powdered sugar

Heat oven to 400 degrees. Mix butter, 1/2 cup powdered sugar, and vanilla in a large bowl. Stir in flour, nuts, and salt until dough holds together. Shape dough into 1 inch balls. Place about 1 inch apart on ungreased cookie sheet. Bake 10-12 minutes or until set, but not browned. Remove from cookie sheet. Cool slightly on wire rack. Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.
