1 ½ cup (3/4 cup) shortening
2 cups (1 cup) sugar
4 eggs (2 eggs)
1 tsp (1/2 tsp) vanilla or lemon extract
5 cups (2 ½ cups) self-rising flour
Mix first 4 ingredients thoroughly. Stir in self rising flour. Chill at least 1 hour. Roll out ¼ to ½ inch thick. Cut into desired shapes. Placed on ungreased baking sheet. Bake until golden brown, 400° for 5 minutes. Cool on cookie sheet 5 minutes before removing to cooling rack.
BUTTERCREAM FROSTING
3 cups powdered sugar
1/3 cup STICK margarine or butter, softened
1 ½ tsp vanilla
1 to 2 TBSP milk
Mix powdered sugar and margarine in medium bowl. Stir in vanilla and milk. Beat until smooth and spreadable. Frosts one 13x9-inch cake or fills and frosts one 8- or 9- inch two-layer cake.
