ROLLED OAT COOKIES (no egg)
ROLLED OAT COOKIES (no egg)
1 cup butter or margarine 1 cup packed brown sugar ¼ cup water 1 tsp vanilla extract 3 cups quick cooking oats 1 ¼ cup flour 1 tsp salt ¼ tsp baking soda
Preheat oven to 375°. In a mixing bowl cream butter and brown sugar. Add water and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Drop by rounded teaspoon onto cookie sheet (you may flatten slightly with fingers, but I like my puffy so I don’t). Bake for 12 minutes or until lightly browned. Cool on pan for 3-5 minutes before transferring to wire rack. Makes 5 dozen cookies (if you use the pampered chef cookie scoop).
You can add raisins, chocolate chips or your favorite addition after you mix in dry ingredients before baking.
