JALAPENO BEEF SANDWICHES

**I love recipes like this one; just dump and go!! I threw everything in my crockpot at around 12:30pm and let it cook on high for 3hrs, then turned it down to low for about another 3hrs. The meat was very juicy & tender. This does have a bite to it, so may not be right for children. Larry & I thought it was very good though, I served ours on toasted hamburger buns.**

Jalapeno Beef Sandwiches

Ingredients:

3+/- lbs stew beef
1/4 cup olive oil
1/2 cup lime juice
1/2 cup dijon mustard
1/2 jar of pickled jalapeno slices (plus half the juice from the jar)
1 tbsp garlic granules (I use Garlic Garlic by Tastefully Simple) or use fresh garlic
1 tsp salt

Dump everything into your slow cooker, and cook for 5-6 hours, or until the meat is tender.

Serve on hamburger buns, topped with provolone or swiss cheese. (We do it like an open face sandwich. Make sure and put plenty of "juice" on the bun to make it good and soggy~this requires a fork to eat!)

I made this for a potluck at work. It was a hit! I provided buns and tortillas. I lot of people liked using tortillas and making a wrap out of the meat. Yummy!!!
