SESAME CHICKEN

Sesame Chicken

serves 6

1/2 cup flour
2 teaspoons garlic salt
3 boneless skinless chicken breasts
4 tablespoons butter
3/4 cup brown sugar
1/2 cup soy sauce
1/2 cup ketchup (or 1/4 cup tomato paste and 1/4 cup water)
1/4 cup honey
2 tablespoons cider vinegar
3 cloves garlic, minced
1 teaspoon ginger
1 teaspoon salt
1 onion, sliced
2 tablespoons sesame seeds, toasted
2 tablespoons chopped green onions

Combine flour and garlic salt in a bowl. Set aside.

Pound chicken breasts to a thickness of about 1/2-inch. Dredge in flour mixture. Melt butter in skillet and add chicken pieces. Brown on both sides for a total of about 6 minutes. Remove chicken and place in a 9x13 baking dish.

Add onion to skillet and sauté until tender, about 5 minutes. Combine sugar, soy sauce, ketchup, honey, vinegar, garlic, ginger, and salt; pour over onions and stir. Pour onion mixture over chicken in baking dish. Cover with foil and bake at 350 for 25-30 minutes.

Remove from oven, add sesame seeds and toss gently. Serve over rice or lo mein. Garnish with green onions.
