AMY'S FROZEN FRUIT SMOOTHIE

Smoothies are so yummy...but can be VERY expensive to buy and who knows HOW MANY calories and fat!!! So......I came up with this recipe to satisfy that craving without having to empty my wallet or worry about my waistline expanding.  Sometimes I will add a tablespoon or two of peanut butter to give it some lasting power.  I had one for breakfast just this morning and I was barely hungry at lunch time! 

I buy the single serve portions of pineapple tidbits in a plastic container and just pop them in the freezer until I need one.  You could also buy a larger can and divide them into ice cube trays or small plastic freezer containers.

 
AMY’S FROZEN FRUIT SMOOTHIE

1/2 cup frozen pineapple tidbits in juice
2 strawberries, unsweetened & frozen
4 TBSP Dannon Light and Fit Nonfat Vanilla Yogurt
1/2 cup 2% milk
Directions
Run container of frozen pineapple tidbits under warm water to thaw slightly. Remove plastic lid and pop out of container like you would an ice cube. Place all ingredients into blender and blend until desired consistency. Place in large frosted mug and enjoy!

BLUEBERRY FROZEN YOGURT

Blueberry Frozen Yogurt

1 bag of frozen blueberries
5 cups of plain or vanilla yogurt
2 cups of half & half
2 cups of sugar

Crush berries. Mix all ingredients & refrigerate for 30 minutes. Freeze according to your Ice Cream makers instructions

NO-COOK VANILLA ICE CREAM

No-Cook Vanilla Ice Cream
makes 4 qts

4 eggs
1 cup sugar
2 TBSP vanilla... See More
1/2 pint whipping cream
2 cans sweetened condensed milk
Milk (approx 1 1/2 quarts)
1/8 tsp salt

Combine eggs, cream, sugar, salt and vanilla in bowl and mix well with mixer. Pour into freezer can, add sweetened condensed milk and stir well. Add milk to fill line on can and stir. Churn in freezer per instructions. Makes approx. 4 qts.

** There are so many things you can do to this ice cream to make it special. Our favorite is Cherry Chocolate Chip: add 1 jar of marachino cherries drained and chopped, and 1 cup miniature chocolate chips.**

*** a side note to this recipe....add extras BEFORE you add milk to the fill line...otherwise it will be too full!!***

HOME FROZEN SHERBET

HOME FROZEN SHERBET
makes 4 qts

2 liter bottle of orange or strawberry pop (or other favorite flavor)
2 cans sweetened condensed milk
1 - 20oz can crushed pineapple

Mix in your ice cream freezer can. Stir a little with the freezer paddle, then freeze as you would for ice cream.

ICE CREAM CAKE

ICE CREAM CAKE

1 box ice cream sandwiches
1/2 gallon softened ice cream (I use either chocolate or vanilla, but you can use whatever flavor you like best)
1 tub cool whip
Ice cream toppings like chocolate syrup, caramel sauce, nuts chocolate shavings, etc.

Line the bottom of a 9x13 casserole dish with unwrapped ice cream sandwiches. Cut to fit if necessary to cover the bottom totally.
Spread softened ice cream over the ice cream sandwiches.
Spread tub of cool whip over layer of ice cream.
Top with desired ice cream toppings. Freeze until firm. Cut into squares and serve.

**This is a favorite Birthday Cake in the Brewer household!!! Just be quick if you want to light up the birthday candles!!!**

PUMPKIN ICE CREAM

Pumpkin Ice Cream

14 oz can of pumpkin
1/2 cup brown sugar
1/4 tsp cinnamon... Read More... See More
1/8 tsp nutmeg
1/4 tsp ginger
1/2 cup maple syrup
1 cup milk
2 cups whipping cream
Mix ingredients, COOL! and pour into Home Made Ice Cream Maker
Tastes like pumpkin pie

I would only add about a 1/4 cup of maple syrup as it tastes a little strong on the maple side. But can't complain. ENjoy!!

2 1/2 cups crushed Ritz crackers (two stacks)
1/2 cup melted margarine
3 tbs. sugar

Mix the above and press into a 9x13 pan.

2 cans Eagle Brand Mild
12 oz can frozen lemonade concentrate - thawed
12 oz Cool Whip

Mix Eagle Brand Milk and lemonade with a spoon until smooth and thick.
Stir in Cool Whip. Pour this over crust. Cover and refrigerate for 3-4
hours.

Make flowers to decroate the top of pie with 6 Maraschino cherries and 1
can Mandarin oranges.

Orange juice concentrate can be used in place of lemonade, but I like the
lemonade better.
