STRAWBERRY SHORTCAKE w/ HOMEMADE WHIPPED CREAM


STRAWBERRY SHORTCAKE with HOMEMADE WHIPPED CREAM

1 lb strawberries, hulled and sliced
¼ cup honey
1 cup heavy whipping cream
2 TBSP sugar
1 tsp vanilla
8 shortcake cups (or slices of pound cake…your choice)

Place strawberries in a bowl and drizzle with honey. Stir; set aside at room temp for about 10 minutes to allow juices to flow.

In a chilled bowl, mix heavy whipping cream, sugar and vanilla. Mix on high with electric mixer until stiff peaks form.

Simple recipe. You can use any berry in season. It's great with raspberries.

1 pkg (21 1/2 or 23.6 oz) fudge brownie mix
1 can (14 oz) sweetened condensed milk
1/2 cup cold water
1 pkg (4-serving size) instant vanilla flavor pudding
1 3/4 cups cool whip
1 qt fresh strawberries, cleaned, hulled & halved

Preheat oven to 350 degrees. Grease two 9-inch round cake pans. Line with waxed paper, extending up sides of pan: grease waxed paper.
Prepare brownie mix as package directs for cake-like brownies; pour into prepared pans. Bake 20 minutes or until top springs back when touched. cool.
In large bowl, mix sweetened condensed milk and water; beat in pudding mix. Chill 5 minutes. Fold in whipped topping. Place 1 brownie layer on serving plate. Top with half each of pudding mixture and berries. Repeat. Refrigerate leftovers. Makes 8-10 servings.
 
But is sure did taste good!!!!  LOL
 

EGGLESS CAKE

EGGLESS CAKE

**This recipe may also be known as Victory Cake or War Cake.
***During and after WWII eggs and white sugar were difficult to come by, so this cake was typically made with brown sugar.

makes 1 loaf

1/2 cup shortening
1 cup sugar (white or brown)
1 cup sour milk (stir in 1 TBSP lemon juice or vinegar to regular milk to make it sour)
2 cups flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp soda
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg

Cream shortening and sugar. Sift together flour, salt, baking powder, soda, cinnamon, allspice and nutmeg. Add sifted mixture and sour milk alternately to creamed mixture. Bake in a prepared loaf pan at 375 degrees for 40-45 minutes.

1 boxed lemon cake mix
one 3.4 ounce package instant lemon pudding mix
2/3 cup vegetable oil
4 eggs
1 cup lemon-lime soda

ICING:
1 cup confectioners' sugar
lemon juice

Preheat oven to 350 degrees. Grease and flour a 10-inch Bundt pan. Combine cake mix, pudding mix and oil in a large bowl. Beat in eggs, one at a time, then slowly add lemon-lime soda. Pour batter into Bundt pan, and bake for 40-50 minutes until toothpick inserted in center comes out clean. Cool completely on wire rack, then invert on serving plate. Mix confectioner's sugar with enough lemon juice to make thin icing, and drizzle over top of cooled cake. Serves 8-10.

ANNE'S SOCK IT TO ME CAKE

ANNE’S SOCK IT TO ME CAKE
prep: 15 mins
bake time: 1 hour oven OR 20 mins microwave

1 yellow butter cake mix
2/3 cup sugar
1 cup (8oz) sour cream
2/3 cup oil
4 eggs
2 tsp cinnamon
½ cup chopped nuts

Mix ingredients together thoroughly.
Butter a bunt pan heavily and flour with the following mixture:

3 TBSP powdered sugar
1 tsp cinnamon
2 TBSP chopped nuts

Spread ½ the batter in the bunt pan.
Sprinkle with the following mixture:

3 TBSP brown sugar
1 tsp cinnamon
2 TBSP chopped nuts.

Add the rest of the batter. Bake at 350° for 1 hour. OR you can bake in a microwave safe bunt pan for 20-22 minutes.

SANDEE'S STRAWBERRY SHORTCAKE

2 c. flour
3 tsp. baking powder
1 tsp. salt
4 tbsp. sugar
6 tbsp. shortening
3/4 c. milk

Mix dry ingredients together. Cut in shortening, then stir in milk. Mix lightly until all ingredients are moist and biscuit dough has formed. Knead once or twice. Tear off biscuit-sized lumps of dough and place lumps on cookie sheet. (or if you like neat circles, cut them out!) Bake at 450 for 10-12 minutes or until lightly browned.

Topping:
Slice strawberries and sprinkle with sugar. Refrigerate until chilled. Top biscuits with berries and whipped cream.

ICE CREAM CAKE

ICE CREAM CAKE

1 box ice cream sandwiches
1/2 gallon softened ice cream (I use either chocolate or vanilla, but you can use whatever flavor you like best)
1 tub cool whip
Ice cream toppings like chocolate syrup, caramel sauce, nuts chocolate shavings, etc.

Line the bottom of a 9x13 casserole dish with unwrapped ice cream sandwiches. Cut to fit if necessary to cover the bottom totally.
Spread softened ice cream over the ice cream sandwiches.
Spread tub of cool whip over layer of ice cream.
Top with desired ice cream toppings. Freeze until firm. Cut into squares and serve.

**This is a favorite Birthday Cake in the Brewer household!!! Just be quick if you want to light up the birthday candles!!!**

PUMPKIN ROLL w/ CREAM CHEESE FILLING

PUMPKIN ROLL with CREAM CHEESE FILLING

3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup all-purpose flour
1 tsp baking powder
2 tsps cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

FILLING:
8 oz cream cheese, softened
4 TBSP butter or margarine
1 cup powdered sugar
1/2 tsp vanilla

PREPARATION:
In large bowl, combine eggs and sugar, beating with an electric mixer until thick and light yellow in color. Add pumpkin and lemon juice, mixing until blended.

In separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into greased and waxed paper lined 10x15 inch jelly roll pan.

Bake at 350 degrees for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10-inch side, roll cake up in towel. Set aside.

While cake is cooling in towel, prepare filling, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth.

Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel :>). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Keep leftover slices refrigerated. This pumpkin roll freezes well.

<<<I used the pampered chef bar pan which is slightly larger than 10x15, so it made a thinner cake. My cake stuck (because I just greased the pan and didn't use waxed or parchment paper) but because of the thinness of it I was able to use a spatula and sort of pry it a little at a time off the pan. I also didn't wait the extra 10 minutes cooling it before I rolled it in the towel. It sounds more difficult than it actually is. I was AMAZED at how EASY this pumpkin roll was to make!!!!>>>>>

BLACK FOREST CAKE

BLACK FOREST CAKE

1 box Devil's food cake prepared according to directions in 3 - 9" round pans
1 tub of Cool Whip
1 can of Cherry pie filling

Layer cake, cool whip, pie filling, cool whip. Repeat.
On top layer frost with cool whip. Add dollop of pie filling to make it look pretty!!!

CHOCOLATE ECLAIR CAKE

Chocolate Eclair Cake

Cake:

2 pkgs. (3.5 oz. each) instant vanilla pudding
3 cups cold milk
8 oz. cool whip
1 box graham crackers (you won't use them all)

Icing:

1 1/2 cups powdered sugar
2 envelopes choco-bake (picture posted below) pre-melted chocolate
1 tsp. vanilla
3 tsp. light Karo syrup
2 Tbls. butter, softened
4 Tbls. milk

For the cake:

Mix pudding, milk and cool whip until it is a pudding texture.

In a 9x13 pan, put a layer of graham crackers and then spread 1/2 of pudding mixture. Repeat another layer and end with crackers on top.

Icing:

Mix powdered sugar, choco-bake, vanilla, Karo syrup, butter and milk until somewhat thick. Spread over top layer of graham crakers.

Chill overnight ot at least 8 hours.

AMISH FRIENDSHIP BREAD w/out STARTER

Amish Friendship Bread Recipe from Winnie
(w/o Starter)

1 C vegetable oil
1 1/2 C sugar
...1 tsp vanilla
3 large eggs
1/2 tsp salt
2 tsp cinnamon
2 1/2 C flour
1 1/4 C milk
1/2 tsp soda
1 small box instant vanilla pudding
1 1/2 tsp baking powder
1/3 C chopped nuts (optional)

350 degree.

Mix oil, sugar, vanilla, eggs, salt, cinnamon.
Add all remaining ingredients, mix well.
Grease two loaf pans. Sprinkle bottoms of pans with sugar/cinnamon mixture. Pour batter into two pans. Sprinkle top with sugar/cinnamon mixture.
Bake 1 hour or til done.
