TORTILLA LIME SOUP

Weight Watchers "Simply Bueno"
Serves 4 - 3 points per serving (generous 2 cups)
1 t olive oil
1 onion, chopped
2 garlic cloves, minced
2 t ground cumin
1/8 t cayenne pepper
4 cups vegetable broth
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
2 cups fresh or frozen corn kernels
2 (6-inch) corn tortillas, cut into 2x 1/2-inch strips
2 T fresh lime juice
1/3 cup packed fresh cilantro leaves
1/2 Hass avocado, pitted, peeled, and diced

Heat the oil in a large nonstick Dutch oven over medium-high heat. Add the onion and garlic; cook, stirring frequently, until golden, about 6 minutes. Add the cumin and cayenne; cook, stirring constantly, until gragrant, about 30 seconds.

Add the broth, tomatoes, and corn to the Dutch oven; bring to a boil. Reduce the heat and simmer about 5 minutes.

Meanwhile, spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the tortilla strips and cook, turning occasionally, until crisp and golden, about 4 minutes. Remove the soup from the heat; stir in the lim juice and cilantro. Ladle the soup into 4 bowls and top with the tortilla strips and avocado.

Per serving (generous 2 cups): 180 calories, 6g fat, 6g fiber
