OATMEAL MUFFINS

I've made these muffins for my boys many times over the years....changing up the fruit added to make it a whole new muffin.  Dried cranberries and apples are a favorite!
OATMEAL MUFFINS
Makes 12 muffins
prep time 10 mins: baking time 25 mins

1 cup + 2 TBSP all purpose flour
2 tsp baking powder
¼ tsp cinnamon
¼ tsp salt
¼ cup margarine
¼ cup packed brown sugar
¼ cup sugar
1 egg
1 cup skim milk
4 ½ oz. quick oats uncooked
¾ cup raisins (or your choice of dried fruit)

Preheat oven to 375 degrees. Line muffin tin with 12 paper baking cups. Combine flour, baking powder, cinnamon, and salt in small bowl. Using electric mixer, cream margarine with sugars until light and fluffy. Add egg and beat until combined. Alternately beat in flour mixture and milk, a little of each at a time, beating well after each addition. Stir in oats and dried fruit. Fill each baking cup about 2/3 full. Bake for 20-25 minutes or until toothpick inserted in center comes out dry.
