MEATBALLS
** Okay so the first part of this recipe doesn't require the crockpot, but when in a pinch I just buy frozen meatballs from the grocery, or if I was smart and made extras to freeze I just pull some homemade ones out of my own freezer***
1 lb lean ground beef (I always double or triple because 1 lb is never enough for my family and I like to have extras to freeze!!)
1 egg
1/2 cup seasoned bread crumbs
1/4 cup diced onion
1 1/2 TBSP Italian seasoning
salt and pepper to taste
Preheat oven to 400 degrees. Mix all ingredients thoroughly with your hands. Shape meat mixture into 1 1/2" balls and place on ungreased baking sheet with sides. Bake for 20-22 minutes or until done.
For Meatball Subs: I take the cooked meatballs and put them in a crockpot and cover them with prepared marinara sauce. Simmer on low 8 hours or high for 4 hours. Serve on hoagie style bread with your selection of cheese (we use mozarella) and veggies (olives, bell pepper and onion are our fav's).
